Cebiche de Pescado
Ingredients :
* 2 pounds mahi mahi filet
* 1 cup lime juice
* 1 clove of garlic, crushed
* hot pepper sauce
* salt and pepper
* large onion, finely chopped
* 2 red peppers, cut into strips
* 2 stalks of celery, finely chopped
* cilantro, finely chopped
* two ears of corn, cooked and cut into 2-inch pieces
* two sweet potatoes, cooked, peeled, and sliced
Method :
Wash the fish and cut into small cubes. Add lime juice, garlic, pepper sauce, salt and pepper. Let stand for one hour.
Add the onion, red peppers, chopped celery and cilantro. Let stand one hour more.
Serve with the corn on the cob and sweet potato.
