Polenta and Cod 'mantecato
Ingredients :
1kg dry salted cod,
3 liters frying oil,
1kg flour 'bramata 'gialla',
2 garlic cloves.
Method :
For the cod :

Incorporarvi l’olio secondo la richiesta dell’omogeneità Del composto.
For the polenta :
Bring 5 liters of oil to the boil and add the flour with the help of a hand whisk.
Cook and keep turning the whisk in one direction for 45 mins continuously.
