Mustard
Ingredients :
# 150g (5oz) dry mustard seeds
# 1 medium onion, chopped
# 2 cloves garlic, crushed
# 1 tsp salt
# 2 tsp ground black pepper
# 1 bay leaf
# 2 tsp Tobasco sauce
# 2 Tbsp golden syrup
# 1 Tbsp curry powder
# 1 cup white wine
# 1 cup chicken stock
Method :
Combine all the Ingredients : into a large saucepan and cover with water. Leave to soak for 1 hour, drain and add fresh water to cover. Leave for 2 hours then simmer for the next hour, stirring frequently to prevent the mixture from catching, adding more water or wine as needed. Remove from the heat and cool. Place in a blender or food processor and roughly chop (don't puree') Pour into sterilized jars and store in a cool place for 1 week before using.
